Cook elbow macaroni al dente. While macaroni is cooking, place shredded Colby Jack cheese into a medium sauce pan. Sprinkle 1 tsp. cornstarch over the cheese and toss until cheese is evenly coated. Add the can of condensed milk to the cheese mixture. Turn heat to medium and whisk until cheese begins to melt. Using a heat safe spatula, continue stirring, scraping the side and bottom of the saucepan for about 3-5 minutes or until sauce thickens and doesn't have a starchy taste. Turn heat off and add the Ring of Fire Original Hot Sauce to the cheese sauce and stir until well blended. Fold in cooked macaroni. Serve immediately. Makes about 4 servings.
Note: To make Chili Mac & Cheese, add a can of No Bean Chili to the cheese sauce. Cook additional elbow macaroni and fold into chili cheese sauce. Garnish with sliced green onions.
If you want to grate your own cheese instead of using pre-grated cheese, here is how you do that:
1-8oz block of Colby Jack cheese, (use large holes on your grater to grate cheese) and 1 Tablespoon of Cornstarch instead of one teaspoon. Follow the directions above. Makes about 2 cups.
